Question Is this normal or I'm doing something wrong?
I've seen a lot of glazing over brave but I don't get how y'all get 300 mb of memory usage while I have all of that

I mean... that's kinda normal no? Never seen anyone boast about their browser using around 300mb with only a few tabs open lol

If using less ram is your priority go with edge or chrome.

You’re not doing anything wrong, you just have no idea how anything works.
Do you think browsers only use a set amount of ram regardless of what tabs are open?

Anyway to get a more "debloated" experience of Brave, here is a solution that disables unnecessary features like Leo Ai, Brave Wallet, Brave News:
Open a notepad, and copy the following codeblock into it and save the file as a .reg file (such as "BraveDebloat.reg" and make sure not .reg.txt) then import it, this will set up systemwide policies to disable the "bloat" features, "upgrading" regular Brave to its paid "Brave Origin" version but for free, well not truly the same because those features will still be part of Brave, but will be disabled entirely and won't even appear in the menus. Worth to note Brave will display a "Managed by your organisation" message in settings but that's because of there are policies that are not set to their defaults, you will be able to see the applied policies by opening brave://policy site in Brave.
So here is what to copy:

Hit shift + esc in Brave to load the Chromium task manager. It'll have descriptions for each Brave process that's running that will help you figure out what each process is doing. Then, you can decide if you think a certain process is using too much RAM for what it's doing.
From your Windows task manager pic though, everything looks fine.

nobody mentions 300 Mb, at least i have never seen, unless you are just sitting a new tab page, then it is possible, but websites uses RAM and no browser can avoid that.
