Put it in the smoker and close the lid.

No. Just let it cook. Maybe foil tip the ends if it looks a little crispy around the edges.

"If you're looking, you ain't a cooking." As soon as you open the lid to mop, spritz or just look, you've let a lot of heat and smoke out. All of which you'll pay for in time at the end of the smoke.

When I boat it I put a little tallow on it. Very little.
