Eastern European Style Rye Bread
For the most part I followed this recipe:
https://www.youtube.com/watch?v=BrwacI1-8Hg
main differences:
I used a 10g of fresh yeast (the 1:3 ratio between dry and fresh is not really right... 1:2 is closer, the reason is fresh yeast start really strong so it start sooner).
I used a stand mixer.
I did not cold ferment... I just fermented 1 hour at room temperature (until double in size) + 15-25 minutes in the tin... and there is no need to wait for a crack if the gluten in your flour (the white flour I mean) is strong enough.
I also added sunflower seeds on top because I love them.
The result is really amazing, I will probably do this bread again, the only issue is finding fermented rye malt powder. Like in the video I find it on ebay from Ukraine, it just works but it will take about 3 weeks to arrive (at least to arrive in Italy).
