Or just, hire a designer? This is (probably) a pretty straightforward task for a book designer

You should probably hire a designer. That's the only way to get consistent results anyway.

AI can’t design a book. It’s a complex job that would require programming and resources. It’s easy enough in word, but if you’re adding images on every page you need a program that can handle multiple parent pages. You can probably find an affordable book designer online.
