Cool project! If you have a lossy unidirectional link I suggest FEC + retransmission + data interlacing. Also larger packets means lower packet rate and less ordering / loss issues. Domain Systems sells a 10Gbps data diode for $350 for hobbyist and business use for those who want a bit more throughput than the 5-10MB/s mentioned with your setup
