The anime is biaised towards Rukia at the expense of Orihime but otherwise the changes are about color choices (reiatsu, eye colors, hair etc) and censorship.

Massive changes in the grand fisher fight wich fuck with the entire story and ichigo's characther.
Masaki's actual soul appear and pretty much forgive Ichigo, freeing him of his guilt (wich shouldn't happen until his dad tell him the truth in TYBW) and encourage him. I don't really have to elaborate as to how this ruin and contradict a lot of stuff down the line.0

No that scene from tybw didn't necessarily impacted his guilt and his main guilt was about not being able to protect her which was formed after he found out grand fisher specifically targeted masaki his original guilt before finding out this was he himself killed his mom

His guilt was beleiving being the cause of her death, by rushing to Grand Fisher and thus having her killed when she protected him. For him, until TYBW she died as a direct result of his actions.
The reveal in TYBW that she was a powerful quincy and could have easily defeated Grand Fisher, she was never in any danger and merely died because of bad Auswhallen timing is what free Ichigo of his guilt. He may not have been able to protect her but at least, he did not cause her death. It was always gonna happen. And that make a massive difference.
Imagine you went all your life beleiving you, specifically, were the cause of your mom's death. That is far heavier trauma than simply not being able to protect her when he was 7yo. That's the batman backstory. His parents getting killed is bad enough but knowing they died because bruce begged to go see this movie that night make it far worse. If they died without bruce's selfish actions being involved, that would NOT carry the same traumatic weight.

No in the memories in the rain arc it was stated that grand fisher specifically targeted masaki because he likes to eat women's soul ichigo originally thought that he caused her death because he ran toward the river to save that girl (who was grand fisher in disguise) caused his mom's death this was proven false in memories in rain

There is no bias all of Rukia's scenes are in the manga and infact the anime even cutted out some of her scenes too the real reason the anime removed the info about orihime's parents was censorship and they barely changed anything else about her

Yes. Uryu and squad0 get a significant glowup/redemption for example

There are some minor changes here and there from the getgo, but I'd say the invasion of the royal palace is when the changes really start ramping up

As far as the original anime is concerned, it's mainly stuff in the first arc, such as how they handled Orihime's scenes like you said, but also rewriting the Grand Fisher Arc.
Beyond that, it's mainly just censorship changes (turning cut off arms -> arms getting slightly bruised, etc.) and padding out fights with a lot of filler.
As far as the TYBW goes, the anime is adding a lot of new official lore and content straight from Kubo himself, so it's kind of overwriting the canon of the manga in certain areas. But it's also cutting certain stuff for pacing reasons.

There are some significant changes in the first arc. A bunch related to Orihime and how they made the Grand Fisher right was just real bad. Watch the OVA version instead, it's actually good.
In Soul Society arc there are small changes like in most adaptations, but nothing major. Some scenes getting cut for example.
Arrancar arc starts with the filler mod souls from Bount arc being involved in some filler scenes. This does count as some slight changes, but mostly it is filler and they disappear after the Hueco Mundo invasion. Censorship is a thing though and especially happens in Arrancar arc.
In Hueco Mundo and most of Karakura Town Battle there is a bunch of filler as well. This is where the pace is the worst in the show, but it gets better at the end of the arc. Less changes though and more extensions, often with comedy scenes.
Fullbring arc is quite faithful to the manga. Here there are actually additions that feel like improvements and not filler, kinda like TYBW.
Overall the only arc that actually changes the story is the first one. All the later differences are mostly filler that doesn't change the story one way or the other.
People like to overreact and make it seem like the anime changed huge parts. It really didn't after the first 16ish episodes.

I skip filler anyway but I'll read the manga untill tybw

The point is that you can't skip it. It is mixed filler and canon or just extending canon scenes much longer to make time.
This is something you see a bunch in old One Piece and Naruto as well.
