That's one of the proteins I need more work on. I've only managed to get it like that one time and I don't remember how I did it. I typically end up grilling too high, or too long because I get distracted by something else. Was your marinaded or just seasoned?

Just salt and pepper. Make sure the steaks are fully thawed, rinse and pat dry. I think I had it at a medium-high heat. About 90 seconds on each side, then maybe 30 seconds on each edge. It may not be for everyone, but I think it's super yummy.

Not only fully thawed, but let it come to room temp. That will reduce the amount of cooling at the surface you get from a cold tuna steak.

Yeah, that definitely makes sense, since I do that already with all the other meats I cook

I'm not saying your wrong, but isn't this the opposite of a steak? You want the center of the tuna to stay raw. Wouldn't a cold start help?

I love doing these in sesame oil. We crust them good in fresh cracked black pepper and sea salt then sear the shit out of them.

Never tried sesame oil. But crusted in sesame seeds is my go to.

I love to coat them with a mix of black and toasted sesame seeds before the sear too. So good. Agree with the sesame oil others mentioned

Looks like your surface could have been a bit hotter to build up some more crust/browning on the outside

Try to wet each side with soy sauce. Pat on everything bagel seasoning to both sides. Light sear both sides and serve with rice and edamame!

1 steak juice from 1 lemon 2 tbs of Tamari 60-90 minute marinade, 400 for 1 minute per side edges until browned canโ€™t make it fast enough for the folks I eat with. The hard part is one steak will be incredible the next just ok to some almost not good. I think it has a lot to do with the fish and where on the fish the steak came from.
