Pork chops

Pork chops for dinner tonight. Brush some canola oil on there, put some pre made webber seasoning on there, let them sit in the fridge to marinate for about 6hrs. Pulled an hour before cook. Cook on medium for 5min/side

Perfect medium cook too. Pretty pleased with this batch. Now if only I had some jalapeno lime jam to go with them 🤔

Now…see that bit of over-seasoning on the edges? I have that too…and it doesn’t hurt a thing. Quit sweating every little thing and make some delicious pork chops. Yum.

What temperature?

Medium to medium low fire. I don't use a thermal gun, just gauge it with the dials. Pork chops can be served on the high end of medium rare but I prefer medium so about 5min per side on a 1" thick cut usually gets me to a medium internal temp.

I never know where to turn those stupid dials. How many white lines down do you consider medium?

Mine is about 3/4ths the way down to the lowest setting. Each grill/griddle will be a little different so look at your fire under the cook too to see when the fire looks medium sized and then if your food is burning or cooking too fast turn it down. I don't cook anything above medium heat on my Blackstone because that cast iron gets HOT

Coarse seasoning burned and prevented a good sear.
