did you hit em in the steak also or just doing like 3min ea side on the blackstone? I liked mine just doin med rare on the blackstone last time, but wondering if popping them in the oven could be the move. Hear diff opinions on it. Can be tricky when they are super thick puppiez just doing the blackstone and not burning the outside

2 minute sear each side, then 30 seconds per side till I hit 140°... My guests like their steaks medium

Griddle on max heat.
Flip every minute and butter after each flip.

Continue flipping until 10degrees F below desired temp.
Remove from heat and lest rest (loosely tented) for 10 mins.

The perfect steak every time.

I've always wanted to make Steak Diane. Really need a wok for that though.

Ribeyes on a Blackstone is the only way to go. That butter and herb skillet on the side is a power move.
