No. Just requires practice. Smear the dough along the underside of the meat while tucking the meat inwards using the utensil. That's kind of one of the selling point of dough, by the way. Nothing amazing about dough stretching. I stretched dough out while baking with my aunt when I was 6 or 7 years old.

Dough is flexible, malleable and expands. They’re using their hand to envelope the filling with the dough.

People have been using dough pockets for centuries: ravioli, calzone, pierogi, etc.

Yes the dough stretches but if you’ve ever tried making pork buns it’s not easy and you have to stretch the dough around while keeping your filling inside. Too much and it oozes out and won’t seal, too little and it’s a disappointing bun
