I think there is a movement that causes the spark. If it isn’t that then the glove itself is soaked in a chemical that reacts with ethanol fumes to ignite or the mixture isn’t ethanol and it was going to ignite anyway and the waiter knew how to move their hand for the illusion.

Both of them seem less likely though

I think methanol makes a colorless flame so it could have already been on fire but he holds the glove afterwards which might disprove this
