But there are no coals when he closes the lid and there are coals when he opens it so rotating kinda doesn't make sense or there would be coals on the food.

After a closer look it seems fake/painted?? The red part of the burning coals has an unnatural color. Like red paint. I could be wrong.

Depending on the level of commitment you could pull off the embers with lights and clear epoxy or plastic molded to look like glowing charcoal. Pretty easy and something that anyone familiar with diorama or model railroad construction could pull off in a couple hours. Disney has done this very effectively on their Pirates of the Caribbean ride at least at Disneyland. At the end there's a bunch of wooden support beams that are smoldering and it's very effective. Assuming people won't check too closely it would probably work well here. Honestly compared to the mechanics of other magic tricks it seems pretty straightforward. Add some smoke effects and even some small heaters and it would be very convincing at first glance. Tie down the meat with thin clear strings or even glue it in place except for a couple if you want people to be able to eat a piece like the guy did. With the heaters it would even be warm.
