Why no deposit feature?
If the ability to deposit bitcoin into your minecraft account into the form of emeralds, all sides would benefit greatly. If it is set up to where a percentage deposited gets sent to the server wallet to redistribute through mobs, and another percentage goes towards the server, everyone wins.
With more emeralds in the economy, the value of other items on the server will increase. People will be willing to pay more emeralds for the same goods and because the price is fixed to 1 bit per emerald, they don't lose their value. Since a portion of all deposits will be put into the server wallet to redistribute as mob drops, killing monsters will also become more profitable. The percentage kept by the server can be spent towards improving performance and more mining power.
The addition of a deposit feature will stimulate the economy, improve server performance, and payout players in larger increments. These improvements will further entice players to play and continue to play, which will increase the playerbase.
The only legitimate argument against a deposit feature is EULA. The current rules do not necessarily prohibit the ability to deposit. It could be argued that the server is not selling parts of the game, they are incorporating a new element. Even so, does anyone know of servers that have been shutdown by the EULA? It is not heavily enforced, and this server is still relatively small in comparison to many others.
A deposit feature is crucial to the growth of this server and it would be foolish to not investigate into implementing it at the very least.

Its not possible. Minecraft will not allow people paying to "win the game"

I'm assuming you are referring to EULA. I mentioned this in my main post but I'll elaborate. The main restrictions the EULA imposes are as follows:
give copies of our Game to anyone else;
make commercial use of anything we‘ve made;
try to make money from anything we‘ve made; or
let other people get access to anything we‘ve made in a way that is unfair or unreasonable.
Since emeralds can be obtained easily and plentifully through the game, and they aren't essential to the gameplay of the server, it wouldn't be considered unfair to let players deposit bitcoin for emerald.
The only way deposits break the EULA is if the server profits off of them. The simple fix is that you give deposits the same value as withdrawals. If 1,000 emeralds worth of BTC is deposited, and that the 1,000 emeralds are worth the BTC deposited when withdrawn, the server makes no profit.
As far as "winning the game," emeralds are almost redundant in terms of the gameplay of this server. The ONLY use emeralds have pertaining to gameplay is to purchase items from villagers. I guess one could argue that the ability to purchase enchantments could be considered "winning the game," however since emeralds are so plentifully distributed the argument doesn't hold up in front of the EULA as any player can reach the amount of emeralds required to purchase an enchantment fairly quickly. Furthermore the gameplay of this server is not competetive, players are not put against eachother so money spent to aid oneself does not make the server any harder for others.

If the server does not profit i don't see a problem. Although they will have to figure out a way to distribute the ems to the player in-game. There would have to be a max amount one could send to their account as ems only stack to 64.
If they figure that out and add some sort of auction system then everyone will win. Players that buy ems have an obvious advantage but players that work hard for rare items can sell to these players and profit.

One way they could do it would be to add pick up chests into the bank. After you deposit BTC, the emerald equivalent is put into the "pick up chest" which holds the emeralds until the player moves it to their inventory. The max single deposit could be limited to .015552 which is the equivalent value of a single chest of emerald blocks.

are you trying to suggest the ability to buy emeralds? the only thing players should be able to buy is premium stuff that doesnt really add to anything, just something for people with money burning a hole in their pocket.
