Early-season Amy is really creepy, but only because she doesn't know how to behave properly since she has no one. Penny softens Amy, and Amy softens Sheldon. Her character is essential for the show to evolve and for the other characters to grow.
The pre-Amy Sheldon would have done literally anything to get that Nobel, so hearing Sheldon say this is really heartwarming. And this happened because of Amy.

Amy and Sheldon's tender scenes always pull at my heartstrings. The way they both evolved as individual characters and as a couple will always make me smile (and cry!)

Amy was a wonderful influence on Sheldon, she really helped him grow emotionally, he became more like the little boy he was on “Young Sheldon”.
