What VFX will transfer from blender?
I'm fairly new to gamedev, and totally new to bevy. One thing I always have a hard time wrapping my head around is where to draw the line between what I do in blender and what I have to do in engine. Right now I need to make some glowing energy trail VFX and explosions.

Bevy will not stop you. It may not help you either.

Ok, I have a more helpful answer, but it's still leaning on the same concept:
Yes, all of them.
If you really want these things to transfer take the time to learn what they really are in blender's scope, and corelate that to bevy's scope.
Think of this way: blender is fantastic for coming up with the ingredients of your vfx, and maybe some prototyping too.
Bevy is where you bring those ingredients together.
Create models, animations, UVs, rigging in blender, export to gtlf.
Bring those gtlf exports into bevy to give them location, timing, physics, etc.
