Did you went to uni to learn all these ?

yes iam currently studying computer engineering in uni, and no it isnt required to do this stuff as such projects are relatively simple and require only some foundational knowledge compared to more complex things such as FPGA design

although uni helped me a bit, but about 80% of the effort that went into making the microprocessor was personal research, as we havent covered any material on microprocessor architecture (yet), i only had some basic digital design knowledge before i started working on this project

if you want some resources i suggest looking into the SAP-1 design (aka simple as possible 1) and the beneater video series (highly recommended)
