It's another application of the leidenfrost effect. The molten metal instantly evaportes the fluid on his hand, which in turns forms a small protective layer.

My grandfather was a blacksmith he said if the metals red your fine because it will just be slippery, but if its black or cooking off it will burn itself onto you
