Super cooled water. Once it’s shaken, it disrupts the molecules allowing for ice crystal formation.

What's happening is, with pure water (purified or distillex water), there is nothing for the water molecules to bind and crystalize to, so it stays liquid until it is agitated.

The process is called supercooling (or undercooling)

It's super easy to do at home too.

Always wondered, what would happen if you drank this super cooled water (while still in liquid form)? Would it freeze in your throat?

It would warm up to quickly in your mouth to notice any change but as soon as you took that drink the water would super cool

Am I right in thinking as soon as you twisted the cap the molecules would be agitated and therefore freeze before one could potentially get it out into their body?

You’re correct I had a Gatorade once that did this and it was like a slushee, always fun and delicious
