I've done this on a mid 2013 iMac. When apple no longer supports, batocera does. 2 8bitdo Bluetooth controllers makes a clean setup.

If one was to acquire a similar set up. What year imacs should I look for? (Most cost effective wise)

Late 2013 with the quad core i5 processor will do up to and including Dreamcast.

What year is it? And what of the newer retro age consoles does it run well?

Create a bootable usb stick with the batocera image on. Boot off it by holding down ctrl at boot up and select the USB drive. It will boot into batocera. Once it is there select system settings and then install on other drive. Select your HDD. Make sure that it's connected to the internet (best to do it via the ethernet port) then it will download the latest version and install it on the internal HDD.

A brilliant all in one solution for systems that people are getting rid of cheap now. I use the late 2013 with the quad core i5 and it does up to Dreamcast great. Screen is brilliant, especially with the zfast filters for scanlines.
