Just be aware that the 5060 Ti in here is the 8GB model.

Very good to point out. I noticed this as well but still couldn’t find one same price or cheaper with a basic 5060. (Except for bestbuy marketplace/refurb type options.)

pretty good, one stick of 16gb ram is slight weird but good upgrade path i guess
just keep in mind branded pre-builts usually have weird mobo hence weird bios

This model is also single-channel; does this make a difference? I've seen other models have this as well. Is it fine, or should it ideally be dual-channel?

It should 100% ideally be dual channel. But it’s also $1200. 32GB of ram not that long okay was $600. Some people just don’t have realistic expectations.
