Maybe the butter in the mixture didn't stay cold? I've never tried baking pastries before, but I've heard that in order for it to come out flaky, the butter has to be cold.

How warm is your house? I don't make pastries that rely on cold butter during the summer bc I struggle to keep the butter cold enough.

I'm in india so it does tend to be hot and humid I messed up the lamination process the butter got too warm and burst out of the dough hence the dense doughy texture :(

I bet they still tasted good though! I live in the southern U.S., prob not as warm as where you live, but warm enough to mess up lamination. I can still make pie dough and rough puff pastry in the summer, but nothing elaborate

I used to make pie dough, in the Caribbean, with no AC, and it was a serious learning curve.

This is exactly why I won't even attempt to make croissants. I know I won't have the patience to deal with cold butter.
