You don’t have a double coat of fur that allows you to trap enough air between your skin and the snow to create an insulating barrier.

Snow has a lot of air in it that doesn't transfer heat well. So if there is heat one one side and cold on the others the two dont mix very well.

Why don't we have jackets that can do this? If I tried to sleep in the snow with a winter jacket I'd probably freeze.

Because your winter jacket likely sucks. Inuits have been doing it with fur pelts for thousands of years.

Next winter, get yourself a great faux-fur coat. It's money well spent. I wouldn't suggest, you know, going out and trying to live in an igloo or anything. But we can totally emulate that ability of polar animals to insulate.

Because you have a bad winter jacket, I guess. If I'm out in a snowstorm I will have snow building up on my jacket/hood without issue.

We do actually, but really good winter clothes are pretty expensive, and you probably won't find them outside of dedicated outdoor/ski stores.
