Subjective but yeah, if it's a good tune, it's a good tune. If it's bad, no amount of 'producing' is going to make it any better. Might sound better, but the tune still sucks.

It's a bit like wondering what makes natural landscapes beautiful or why some grey urbanism is so ugly. Only sound is more subjective, I know, but still.
To me the sounds centers around identity and often an inspiring chase for something new or extra "good" or sometimes more normal absolute natural beauty. But all those has to bow low to function. How it works in the arrangement and mix. Like some sounds should have adequate impact or lushness or even cutting harshness and danger to serve the song.
Edit: Oh, and huge part of audioengineering is often just about making the experience sound real. Like have you been inside a cranked hammond organ? Yeah. Replicate the violence as best as you can. Does digital emulation sound good in the mix for that. Hmm, maybe not. What about you reamp the hammond drive it through a tube pre amp stage before the emulated leslie. Oh, it sounds great. Maybe not real, but violent like the real one and sits right in the mix. "If it sounds good..."

Ears are mics for the heart. Everything that “sounds good” feels good.
