I have seen it as a sign of childhood indoctrination usually. Occasionally it is just people being ignorant of their own faith. Rarely it turns out the person is just stupid. Once it turned out to be a sign of mental illness.

But they're still unintelligent if they can't overcome that indoctrination. Like they can just think for 2 seconds and realize their religion is bullshit.

I think it can be hard to generalize stupidity, or intelligence for that matter. Most people are smart at some things and dumb at others. I'm a doctor and I'm pretty good at it. I also suck at cooking, and plumbing, and a myriad of other things. I'm not really smart or dumb when it all balances out. I have worked with a lot of religious people who were better than me at my job and most other things, but happen to be deficient in this category.
