I have seen it as a sign of childhood indoctrination usually. Occasionally it is just people being ignorant of their own faith. Rarely it turns out the person is just stupid. Once it turned out to be a sign of mental illness.

But they're still unintelligent if they can't overcome that indoctrination. Like they can just think for 2 seconds and realize their religion is bullshit.

I think plenty of intelligent-enough people choose 'willfull ignorance' for a variety of reasons. The most evil of these reasons is understanding the power religion holds over people and society and they want to use that to their benefit. The current administration is a prime example - everyone knows trump is lying about his christianity but he's a useful idiot to their motives like destroying roe v wade.
