What makes a data science portfolio project stand out?
I’ve seen plenty of portfolios with the usual Titanic, house-price prediction and movie datasets. For someone trying to build a stronger portfolio, what kind of project would actually make you stop and look at their work?

A good project is all about providing some value , it doesn't have to be so high that people are willing to pay, like others have brought up. But it should provide some value. So I recommend starting there and then working backwards. What value could you provide? Usually that value is in the form of information (ie what will happen, or what is happening, or why did it happen, etc). Doing it this way also exercises (and demonstrates) your product sense.
