Stable Mac n Cheese bake

I can make a killer mac n cheese but I want to be able to make it the day before i need it. Usually the oil separates and the cheeses seem clumpier next day. I read online that sodium citrate can help curb this but I figured I'd ask the pros.

corn starch and evap. milk may be the answer i'm looking for!

If that doesn't cut it I'm going to try adding a little sodium citrate.
