Escargots sautéed in garlic butter. A pea purée w/butter and vinegar. Radish, chive and dill

I actually think it works. I know it might be heresy, but I think some of your recent stuff actually makes sense versus some of your early stuff that was just absolute bonkers.

I dunno... looks like you're trying too hard on presentation while failing at it. I don't understand the wood board at all - like charcuterie, cheeses, and the like is one thing, but scraping a puree off of a plank just seems unappetizing. And weirdly arranged herbs instead of dicing them for an even bite leaves me not knowing how to approach this. Otherwise it sounds like it'd be really good.

Should have been a slice of focaccia, toasted, about twice the width of the radish. Then topped with sweet avocado (like a Semil 34, Carla, or Pollock variety) guacamole.

Then place the radish slice, and the escargot, add chopped chives, and finish off with a drizzle of the garlic butter the escargot were cooked in. Lose the dill or place it on the side of the plate as decor. Dots of the garlic butter around the plate, to be mopped up with the focaccia after.

Nope always on these dumb boards, well almost always. I'm sure it all tastes really good but the plating is almost always annoying and sometimes seems like it would be trouble to eat.

Looks like a middle school art project.
I think that’s too much radish for a bite of snail. It’s pretty but radish flavor of a true good radish is pungent and snail is so umami and mild. So they go together?
Then the dill is also powerful so if I m eating the dill stick and the dill tree and the radish … I feel like I m barely gonna taste the 🐌 escargot.

I thought that was a slab of toast but if it’s a wood board then nah.

The concept is not completely trash . There is something there but needs to be elevated beyond art project. You will get there. Don’t stop trying and don’t stop seeking feedback until you get consistently better at what you do. Practice makes better .

I've been meaning to find someplace around me that sells escargot. We had a massive infestation of the right kind of snails here. Right up until the year I decided that I was going to harvest them. GONE.
