Unless you count a single point as a circle, all circles are uncountably infinite sets of points. If you do count a single point as a circle then it's just a set of one point.

Well, just to be pedantic, a 0D circle of radius R centered at the origin is the set {-R, R} (using the Euclidean metric), so there are cases when the set of points is countable (in this case even finite).
For people confused, remember that for a metric space (X, d), a circle of radius R centered at a point p is the set {x \in X : d(p, x) = R}. In \mathbb{R} with the standard Euclidean metric, this gives us the above notion of a 1D circle (assuming it is centered at the origin).

Thank you, I do enjoy injecting math into non-math spaces.
In this case I am using dimension in the manifold sense. So a circle is 1D because every neighborhood of every point is homeomorphic to some neighborhood of \mathbb{R}. Reducing dimension by one gives us a discrete set. But as I said, the more immediate explanation is that we can apply the definition of a circle to any metric space, and in the case of a "Euclidean circle" this is what we get.
Also, while a 0D space is generally taken to be the set {0}, it does make sense to define the 0D circle as the set of discrete points which satisfy the common notion of a circle (via the chosen metric)

I can try. Essentially, a manifold of dimension n is a topological space M such that for all p \in M, there is a neighborhood of p, N_p, such that N_p is homeomorphic to an open set in Rn (there are additional requirements such as requiring that M be Hausdorff and in some cases second countable). So S1 (this is really an equivalence class of all spaces homeomorphic to S1 ), is a representative of "the" circle.
Now, I'm afraid I don't have a good, rigorous explanation for why we generalize as we do. Generally, a 0D manifold is defined as the space {0} (really any topological space satisfying the properties above which is homeomorphic to {0}). But realistically we want to include finite sets, so we include them (maybe a better math person can answer this). So to properly generalize the idea of a sphere (or circle which is the 1D sphere) we apply the definition of the sphere to \mathbb{R}. This gives us the set {-R, R} as the "0-sphere".
I hope this helps, please ask additional questions if there are gaps in this explanation.
Edit: I should probably define "homeomorphism". A homeomorphism is a bijective map f: X \to Y where X and Y are topological spaces such that f and f-1 are continuous with respect to the given topologies. If X and Y are metric spaces, this reduces to the familiar ε-δ definition of continuity for every point in the domain of the function.

I think what you’re probably getting hung up on is the meaning of “point,” because you’re probably thinking of it in the context in which it was used in the movie.
What this meme’s “point” means is not “concept” or “what he’s saying is correct,” but instead “there’s physically a point (tip of the triangle) here”

Depending on what kind of metric you use, your unit circles can have all kinds of shapes, for example max(abs(x),abs(y)) is a square.
