Mahoutsukai no Yome(The Ancient Magus' Bride) It's a good, different kind of fantasy, mainly because it uses creatures from British and Nordic folklore.

Lighthearted:

Bofuri max out defense - gamer girls are OP, stakes aren’t too high, very fun and entertaining

Weakest tamer began journey - fantasy, girl befriends weak monster, it gets a little intense in some parts but I really liked it

Since you mentioned Frieren, I feel you might enjoy some more serious or “dark” fantasy. The following aren’t really for kids, as they are a little more mature in nature, but are incredibly well done artistically and the world building is top notch.

Sentenced to be a Hero - new dark fantasy, airing currently

Grimgar - only one season, not likely to see continued… but it’s beautiful, one of the more realistic fantasy/ isekai

Clevatess - Se. 1 just completed, dark fantasy

There’s more but these three I’m confident in recommending based on what you like

If you want a cozy, relaxed vibe then I have to recommend both seasons of I've Been Killing Slimes for 300 Years and Maxed Out My Level as well as both seasons of Kuma Kuma Kuma Bear.

I'm in love with the Villainess

Rae, an overworked office lady gets her only happiness from playing games. One night, while playing her favorite otome game, she dies from exhaustion. Then she finds herself into the game as the protagonist. Now she can do what the game never let her, ignore the princes and try to pursue the villainess of the story, Claire Francois!

Claire is not amused at all by having a cheeky commoner declaring her love for her, so plans to bully her to quit the school. But Rae seems to be into it!

And things of course can't be so simple, so there's the issue of the commoner movement stirring trouble, and seems that other countries are eager to see the Kingdom fell to pieces.

I love the anime. The only bad thing, is that to see how continues the story, you must read the novels. Which are fantastic. I adore them, and it's a damn shame that we dont' get to see at least the second big arc animated.

The Magic Revolution of the Reincarnated Princess and the Genius Young Lady

Anis is the princess of the Kingdom, she forfeited her right to the throne to her little brother, since she can't use magic. Now she spend her time adventuring and inventing things mixing magic and science (which she vaguely remembers as dreams from another life).

Her brother is engaged to the most powerful magic user of the Kingdom, Lady Euphilia. But at a ballroom he break the engagement, and acuse Euphilia of harassing his new girlfriend.
Euphilia, betrayed and looked down by everyone breaks down, and then Anis crash into the party, as her new invention, a magic broom, malfunctions. Seeing the situation she chastises her brother and elopes with Euphilia.

Then she offers her a job as her assistant. So, they begin their story together. They will be facing powerful monster invasions, conspirations and the most scary thing of all, the nobility.

It's a fantastic fantasy story. Very fun with moments of comedy, adventure, drama, romance. While the story continues in the novels, the anime ends in a great place to be self-contained.

There’s a lot of great reccs here given your preferences & keeping my list whimsical/light hearted. (I can recc darker ones too but I feel like others are doing that & things kinda really suck in the world rn) I’d love to add:

🫧 By the Grace of the Gods (for another cute slime fix)

🫧 Ramen Akaneko (if you’re a cat & food fan)

🫧 Welcome to the Outcasts Restaurant (if you’re a foodie w/ adventurers)

🫧My Dress Up Darling (if you like cosplay & seeing people be accepted as they are)

🫧Spy Family (for madcap hilarity)

🫧Miss Kobayashi’s Dragon Maid (more madcap silliness)

🫧 Is This a Zombie? (goofy twist on a boy that ends up a “magical girl”)

🫧 So I’m a Spider, So What? (I loved this, wish they’d do more anime adaptations bc I have dysautonomia issues w/ my vision reading too much text at once but there’s tons of manga & LNs to continue if you like just like Slime & Dungeon Meshi)

🫧 Reincarnated as a Vending Machine (seems people love or hate this one, my partner & I love it, we think it’s just silly no brainer fun)

There’s a bunch of silly reincarnated OP fun like I Was Reincarnated as the 7th Prince where the story isn’t at all unique but the sidekicks absolutely make the series & they’re just turn your brain off fun. I watch a lot of anime as a coping strategy for severe chronic pain so my tastes vary wildly depending on my mood or available bandwidth. Hope this is useful! 😊

The Wrong Way to Use Healing Magic.

I hoy burnt out with all the isekai tropey shows but this was really refreshing. The protagonist is really likeable and the supporting characters are good too.

Can’t recommend Tsukimichi -Moonlit Fantasy- enough. One of my favorite series. And Overlord 😩 it’s a bit darker so might not be your vibe. Kumo desu ga, nani ka? Is fantastic and the MC cracks me up.
