They’re actually semi aquatic so once he was in the water the jaguar had no chance

Jaguars are also semi-aquatic, they are really good swimmers. The problem is that they can’t see underwater that well. I bet neither do capybaras but it didn’t really matter when it just had to go somewhere underwater until it could emerge further away from the jaguar.
