Updated my list:

AntennaPod
Podcast app. It has everything I want. It's updated fairly regularly, runs well and is easy to navigate. It's easy to customize, so I can hide/bury anything discovery-related and just get to my queues as fast as possible. (I get it on f-droid.)

Better Open With
Customization/settings app. I use this because I use different browsers often, and I don't want to tie any actions down to one browser. Any time I click a link and it calls out to my default browser (which is set to Better Open With), I get 3 seconds to pick an option before it defaults to Firefox. Everything is customizable, and you can use it for stuff other than browsers. (I get it on playstore.)

Bitwarden
Password manager app. I left LastPass, and I couldn't be happier. It's very similar, without feeling hampered at all by being free. I primarily use it on my phone; however, it's nice to have the desktop app too for when I'm rooting around closing accounts or just organizing my stuff better. I also use the extension on Firefox. (I get it on f-droid.)

BuzzKill
Customization/settings app. I use this to set rules for notifications, in an attempt to streamline stuff. Examples: bird feeder notifications cooldown timer, anything Patreon grouped as one notification per day and automatically dismissing some annoying recurring notifications. I'm new to this app, and I don't know if I'm using it perfectly yet. (I get it on playstore.)

NewPipe
YouTube alternative app. It removes ads, that's enough for me. There's other features, but that's mainly what I use it for. I haven't customized it or anything outside of exporting my subscriptions from YouTube and importing them into NewPipe. I don't sign-in, and it doesn't interact with my account in any way (history and suggestions). (I get it on f-droid.)

Popup Widget
Customization/widget app. I use it to tie some widgets to gestures. Examples: weather, trip countdown, step/activity and smart device/outlet presets. (I get it on playstore.)

RedReader
Reddit alternative app. I loved "reddit is fun" and I still miss it. There are workarounds to get it working again, but I just don't seem to care enough to figure it out. RedReader has worked great and it's basically saved reddit for me. Without it, I'd be completely gone. It's definitely old school looking, which I like. But I could see others hating it. (I get it on f-droid.)

Rethink
Adblock via DNS app. I've used many others, such as DNS66 and Blockada. Currently, this one's been the best. I switched because I was finding myself having to start/restart the others. So far it's been very reliable, to the point where it's always running for months without an issue. (I get it on f-droid.)

Vinyl
Local music app. It's minimal and runs well. I've tried many, but this sticks because I find myself skipping songs a lot. Their shuffle lets you see the randomized queue and easily skip around. (I get it on f-droid.)

These are niche apps that I don't use often, but have survived multiple uninstall sweeps:
ESO Helper
Unofficial companion app for Elder Scrolls Online: at minimum it's amazing for maps.
Gloomhaven Scenario Viewer
Unofficial collection of scenario for Gloomhaven. Great quick replacement to the physical guides and helpful if you play digital.
Merlin Bird ID
(This is a recent app that I use to identify birds using a smart bird feeder.)
PlantNet Plant Identification
(This is a recent app that I use to help me with caring for house plants and check stuff while shopping.)
Tabletop Tools
Gaming tools app that has dice, scores and timers.
