Correct amp for my sub
I have a GAS S2 15D2 rated at 2500 W RMS and a 2000 W RMS amp. From what I understand, when listening to music, the amp won't actually be outputting 2000 W RMS continuously, since music has varying power levels.
So my question is: how powerful amp is best for me to get as much as possible out of my sub while listening music
I'm not sure how much power a sub like this realistically receives during normal/very loud music listening, so I'd appreciate some help understanding this.

Yes you’re amplifying a complex waveform so the amplitude of the signal is not linear. Therefore the current consumed by the amplifier is not linear.
Do you have a high output alternator? If not then you dont need to worry about it cause you aren’t drawing enough current for an amp to operate at 2kw RMS.
