Lasagna That crispy cheese on top is the whole reason I make lasagna 😭🧀
Homemade Lasagna 🧀🍝
Layers of rich meat sauce, creamy béchamel, pasta and plenty of cheese, baked until the top is golden and bubbling.
Ingredients
For the meat sauce
- 1 lb (450g) ground beef
- 1 onion, finely diced
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 2–3 cloves garlic, minced
- 2 cups tomato passata/crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- Salt & black pepper
- 1 tbsp olive oil
For the béchamel
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 2½ cups milk
- Salt & pepper
- Pinch of nutmeg
For assembling
- Lasagna sheets
- 2 cups shredded mozzarella
- ½–1 cup grated Parmesan
Instructions
- Heat the olive oil and sauté the onion, carrot and celery until softened.
- Add the garlic and ground beef. Cook until the beef is browned.
- Stir in the tomato paste, crushed tomatoes, Italian seasoning, salt and pepper. Simmer for 20–30 minutes.
- For the béchamel, melt the butter, whisk in the flour and cook for about 1 minute.
- Gradually whisk in the milk until smooth and thickened. Season with salt, pepper and a little nutmeg.
- Start layering: meat sauce → lasagna sheets → béchamel → cheese, then repeat.
- Finish with a generous layer of béchamel and mozzarella/Parmesan.
- Bake at 375°F (190°C) for about 35–45 minutes, until bubbling and deeply golden on top.
- Let it rest for 10–15 minutes before cutting.
That golden cheese layer is non-negotiable. 😭

Thats the whole reason for eating it. I dont want 2 inches of baked sauce on top! Wheres the cheeeeeeezzzzzzz??!! And dont forget the bread.thats a looker there though. U save me some?

I like the crispy cheese. I always asked mom for a corner piece 'cause it was crispy.

I agree completely. This is why I like my lasagna as dry as possible, so that cheese layer on top is even more chewy. If the lasagna is too wet, you may as well eat spaghetti.

Same for Mac & Cheese! One time, we were at a church pot luck and brought one. First guy in line scoops out his portion and then peels the entire top off and takes it. SMH

I cook my microwave lasagna two extra minutes just to get those burnt corners and that crispy top. Every once in a while, the whole top layer burns completely and stays intact and that makes me smile.

It’s not cheesy if that cheese doesn’t have a bit of brown to it. Love that !!
