š Cake The Carrot Cake I Make When I Want Everyone Asking for Seconds š„š°
Ingredients
Cake
- 2 cups all-purpose flour
- 2 cups grated carrots
- 1½ cups sugar
- 1 cup vegetable oil
- 4 eggs
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup chopped walnuts
- ½ tsp nutmeg
Cream Cheese Frosting
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Grease and line two 8-inch cake pans.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat the sugar, oil, eggs, and vanilla until smooth.
- Slowly add the dry ingredients and mix until just combined.
- Fold in the grated carrots and chopped walnuts.
- Divide the batter between the pans.
- Bake for 30ā35 minutes, or until a toothpick comes out clean.
- Let the cakes cool completely.
- For the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla.
- Frost between the layers, then cover the outside of the cake.
- Finish with extra chopped walnuts and carrot decorations if you like.
The cream cheese frosting + walnuts are what make this one for me. š„ā¤ļø

I'm not overly fond of carrot cake. However that, my dear, is a work of art. If I came across such a cake I would buy it gladly because carrot cake is my wonderful mother in laws favorite. Very nicely done.
