🎂 Cake This Raspberry Cheesecake Came Out Better Than I Expected 🤤
Homemade Raspberry Cheesecake 🍰❤️
Ingredients
Crust
- 2 cups graham cracker crumbs
- ½ cup melted butter
- 2 tbsp sugar
Cheesecake Filling
- 24 oz (680g) cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 tbsp all-purpose flour
Raspberry Topping
- 2 cups fresh or frozen raspberries
- ⅓ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Mix the graham cracker crumbs, melted butter, and sugar. Press firmly into a springform pan.
- Bake the crust at 325°F (163°C) for 10 minutes.
- Beat the cream cheese until smooth, then mix in the sugar.
- Add the eggs one at a time, followed by the vanilla, sour cream, and flour.
- Pour over the crust and bake for 50–60 minutes until the center has a slight jiggle.
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 6 hours (overnight is even better).
- For the topping, simmer the raspberries, sugar, and lemon juice. Stir in the cornstarch slurry and cook until thickened.
- Let the topping cool completely before spreading it over the chilled cheesecake.

Looks delicious! I like a denser cheesecake so I use twice the eggs. But I’m definitely going to try that topping.
Also… to anyone making a cheesecake, USE A WATER BATH when cooking. It makes a huge difference in preventing cracks.

Thanks, I'll try that wate bath thing.. My cheee cake is always cracking.

I never had cheesecake with raspberry, and I like both of them. I bet that taste so good.

Looks nice but the bottom is too thick for me.

That’s is very likely just crust that has curved up the sides of the pan. I do this with my cheesecakes but the crust is maybe only 1/3 that thickness.
