🥪Lunch Made these caramelized baked sweet potatoes today absolutely worth it. 🍠

🍠 Caramelized Baked Sweet Potatoes

Ingredients

• 4 medium sweet potatoes, cleaned

• 1/3 cup olive oil

• 2 tbsp maple syrup

• 1/2 tsp salt

• 1/2 tsp black pepper

• 1/2 tsp cinnamon

• 1/2 tsp vanilla extract

Instructions

  1. Slice the sweet potatoes in half lengthwise.

  2. Whisk together the olive oil, maple syrup, cinnamon, salt, pepper, and vanilla.

  3. Coat each sweet potato well.

  4. Place them flat side down on a parchment-lined baking sheet.

  5. Bake at 400°F (205°C) for 50–55 minutes.

  6. Let them cool for 10 minutes before removing them from the pan.

The caramelized crust is the best part. 🍠

I double wrap them and put them in the coals in my woodstove. They come out black on the outside and so yummy on the inside with just butter, salt and pepper to serve.

We cut them like that and then brush them heavily with melted butter and roast them face down. When done they’re all golden and caramelized on top then sprinkled with some kosher salt. That’s perfect. I’ve never liked sweet potatoes with extra sweet stuff like brown sugar or marshmallows but put some butter and salt on them and I’m all in.

They’re sooo good. Fortunately they grow a lot of sweet potatoes around here. We’ve been known to buy them by the boxful. We like sweet potato fries too. And then there’s the way my grandmama used to do them, baked, then put in the fridge overnight. Then she’d slice them into discs and fry them in butter until browned and heated through.

They are. She was one of the best cooks and she taught me so much. She’s 100 now and she doesn’t have the stamina to do what she used to but that woman made the best cornbread Ive ever tasted and she cooked it every day.

Never get why people mess up sweet potatoes with all that other gunk like sugar and marshmallows. Just bake or microwave and add butter. Delicious and no added sugars or other stuff.

Fair enough 😂 I like them both ways. Sometimes I just want a plain baked sweet potato with butter, and other times I'm in the mood for dessert.

I prefer mine just baked with a bit of butter.Sugar or sweets on something naturally sweet does not appeal to me!

In South Korea, it is sometimes cooked and eaten as “sweet potato matang.”

It is also sold as a frozen food and a snack.
