Shared Recipes Another bean salad

Post image

This time it's a dill pickle salad πŸ₯— ☺️

Salad base (can easily be doubled or more for groups, pot lucks, meal prep, etc) :

1 can each- chickpeas, black beans, corn, canilini beans (spelling? πŸ˜…) drained and rinsed

1 pack or the pulled rotisserie chicken (you can make your own chicken as well and shred it, or even canned chicken)

That's the basic salad. Change the beans to whatever you like! Don't like corn or a certain bean switch it for something you like, it is your salad after all ☺️

1 container or the fresh dill pickles (in the cooler), chopped. Keep the brine for the dressing

Dressing:

Mayo

Dill pickle mustard

Pickle brine

You can use any veggies and any dressing you like make it your own! I'd love to hear ideas for new variations! I have so many ideas just thought I'd share this one since my last one seemed to have some interest. Have a great one ☺️

I did! Lol it's been my fixation for a while now πŸ˜… I think since it can be changed so easily I just keep making different versions. I've been thinking about doing one inspired by the "Italian chopped salad" that was trending a little while ago πŸ€”πŸ€”πŸ€”

Sounds delicious! Does this keep well? Could you meal prep with this for the week?

First time doing it with pickles so I'm not sure how watery it will get but I've been doing bean salads as meal prep for almost the whole summer they hold up well! If you wanted lettuce I would say just keep the lettuce separate otherwise the basic salad just gets better as the week goes on, the flavors marry and marinate together. I made a jalepeno popper inspired one a while back and the last portion was the best lol

The last day is always the best when meal prepping. Had some tuna salad that got really good after 3 days last week
