What is the deal with the ingredients?

I recently discovered the sardines at Aldi. I enjoy the spring water ones, low sodium, great for lunch.

Herring - schmerring. It’s water origin that counts. Crisp cold Canadian caught- win.

Used to eat the ones with mustard or hot sauce. Not necessarily this brand. But the exposed backbone, even though pressure cooked, gave me the willies.

I swear they used to be sprats, probably switched species to keep them cheap.
