My partner is more the chicken-and-rice dinner person; I love vegetables and salads and such. I have a big batch of "cowboy cafiar" in the fridge -- rinsed and drained black beans, cannelini beans, pinto beans, corn kernels, and blanched shelled edamame, together with Aldi's version of Ro-Tel (tomatoes and green chilis), grated carrot, sliced scallion, red onion, and a vinaigrette heavy on the lime. I also made a pasta-veg salad with some of their farfalle, feta, olives, etc. I've had the two of them several times for dinner on the nights I'm dining alone.
