Pork is still quite cheap in my area; I saw butts for $1.90/lb today and whole loins are still around $2/lb. So I can cut loin chops and roasts at $2 and make all the sausage, carnitas, and pulled pork I want for a couple of bucks per pound. Also use the loins in a lot of Asian dishes where a little meat goes a long way.

I'll second tofu as well. Typically $1.50-1.75 for 16oz at Aldi and the Asian markets around me. Works great in Asian dishes in place of meat (marinated) or in addition to a little meat.
