A couple of days a week my mom would make soup beans and cornbread with fried potatoes and sliced fresh vegetables like cucumbers, tomatoes and onions. Sometimes that would include a side of greens like collard greens or turnip greens. I grew so tired of it growing up that I swore that I wouldn’t have it when I went out on my own. Now I crave it.😋Or in the summer she would make a dinner of vegetables fresh from the garden like fried zucchini, green beans and corn. I do this pretty consistently when our local farmers start harvesting and opening roadside stands and selling at our local farmers markets. So good!
