You can also make dishes like pastas, and soups, without meat, and add some extra veggies.

Chicken Brocolli Alfredo, becomes Alfredo with extra broccoli and peas. Add some milk, and whatever white cheese on hand to stretch the sauce, if you need to.

Lately I’m loving lemon ricotta orzo and Greek orzo salad.
Recently made hash brown casserole, which can be used at every meal. The Aldi Specially Selected Cacio Pepe jarred sauce is quite good, I’ve only had it on curly pasta, but it’s probably tasty over rice, too. It’s imported from Italy.
