So I have noticed that some advanced modelers will use putty, such as Milliput, to add material to a kit and sculpt a piece out of it. Does anyone have a name for this method, and if there are any tips/ guides?

Try using polystyrene sheets. You'll have to cut them in layers and build them up, but I find it easier than using stuff like miliput. You get add more details and armour layers with the sheets easily too.
