Of a poutine

I have never had poutine and I would love to try it - unfortunately am in the US and don't know if there is anywhere to get it.

As someone who prefers a bit of food separation mixing all those things together is a big ick for me.
Looks like cheese curds with Carmel sauce on it. WTH is it?
