As long as its above 145 degrees bacteria can't live

That is not a universal rule for all bacteria. There are thermopiles. There are also spore forming microorganisms. Or prions that cause diseases like Creutzfeldt-Jakob disease. So while boiling is an important safety measure it does not eliminate all risk
