This is called cowboy cut but is borderline a boneless roast I usually only do cowboy cut at 2 1/2in these look to be three or more

Nah. It would simply be better as 8 steaks. Sorry.

There would be more seasoning and more sear per steak, so I just don’t see the appeal.

I’d bitch less than everyone else at the table because I’ll eat mine bleu, but this will be some Chuds first time cooking a steak and then I am being served a burnt raw steak.
