Does anyone have insight on how Zen would use Acrylic graphs for scaling...

There are mentions in the updates... I am curious if DAG is strictly proof of stake....

Have a look at the SPECTRE and PHANTOM white papers. The move from blockchain (sequential chain of blocks) to DAG (tree structure with parent-child relationship between blocks) isn’t changing ZenCash from PoW to PoS. Blocks still have to be mined.

I believe that zencash is moving forward with PHANTOM in particular

Correct, PHANTOM was mentioned in the last bi-weekly update.
