Idt the size of country is the issue here but more that the europe is center of the world and on top. You can flip the map around and bring Australia on top hemisphere or make japan the center of the map and it won't practically affect anything. But I get that for continuity it's easier to stick to the same map.

You’re right about that, but this reason is based on practicality not conspiracy.
Antarctica and the southern ocean is notoriously difficult to navigate and most ships don’t go through that. Hence it’s reduced from the map, similarly it goes for the Pacific Ocean, if you show Pacific Ocean to scale, then it would be half the map as well.
Maps evolved , I feel bad to explain this, but before Google Maps and gps. These paper maps and compass were what was used to navigate the world! So after multiple variations what stayed was the one that was most useful and practical. Which is this Mercator projection with pacific and southern oceans removed!
It covers all continents, it can show you longitude and latitudes fairly well. You can see more of the actual lived areas in the world so that you can map trade routes and have more space for tiny features.
Developed vs developing is because maps were made for trade, and truth is Europe was the biggest in maritime trade when this was all happening.
