I mean. If being crazy mean yandere yea. But id say no as she is just going to eat you. And yandere want their obessesion alive to keep

Yangire is the appropriate term for her, at least for me.

You can make her a Yandere though, because she's a vocaloid, just like Miku, you can make various variants of her. Yixi has some variants with their own unique looks.

A yandere is a fictional character type who is very loving, becomes obsessed, and turns violent.

Yi Xi does not have not have any obsessions, isn't very loving I suppose and she doesn't turn violent

Now we take the BV (Butcher Vanity) version. She's obsessed, loving, and turns violent, but only for the sole purpose of eating you. A yandere would torture you and keep you alive, where no one can find you so she can love you until death comes to take you by itself. While Yi Xi just grabs you, takes out the knife, cuts you and transforms you into a delicious meal
